  • boneless, skinless chicken thighs

  • medium red onion

    1 medium red onion, cut into 1-inch chunks

    ½ cup honey

  • apple cider vinegar

    Soak 6 bamboo skewers in water for 30 minutes.

    Make the chicken: Stir together the salt, paprika, black pepper, onion powder, and garlic powder in a small bowl.

    Place the chicken and onion in a medium bowl. Add the seasoning mixture, and toss well to combine.

    Build skewers by alternating 2 pieces of onion and three pieces of chicken, and continuing until all the chicken and onion have been skewered. Set aside.

    Make the hot honey: Place the honey, vinegar, red pepper flakes, cayenne pepper, and salt in a small saucepan. Bring to a boil over medium heat. Reduce to a bare simmer, and cook, stirring occasionally for 1 minute. Remove from heat, and set aside.

    Preheat the grill to medium-high heat. Brush the grill with oil. Add the skewers, and cook until the chicken is golden and cooked through, about 12 minutes, turning the skewers every 3-4 minutes.

    During the final minute of cooking time, lightly brush the skewers with the hot honey mixture, flipping skewers occasionally to char slightly.

    Season the skewers with additional salt to taste. Brush well with the remaining hot honey.
